BBQ Sardines with an orange and mint salsa

Ingredients
1 tsp
Ground Cumin, organic1 tsp
Sweet Paprika, organic 6 fresh sardines
1 lemon, juice of
2 tbsps olive oil
2 cloves of garlic, crushed
1/2 red onion, finely chopped
3 oranges, pith and peel removed and chopped
handful of chopped mint
salt to taste
A good squeeze of lemon or lime
Preparation
In bowl mix the lemon juice, oil, paprika, cumin and garlic. Make a few slashes in the skin of each sardine and rub the marinade thoroughly onto and into the fish. Allow to marinate for at least 10mins. Season generously with course salt.
To make the salsa combined the chopped oranges with the red onion, salt and lemon juice and toss in the mint. Chill until ready to serve
Grilled for about 2-3mins each side or until golden and crispy and serve with the salsa.
