Curried Waldorf Salad

The original Waldorf salad (created at the hotel of the same name in the 1800) combined celery, apples and mayonnaise, with walnuts and raisins later added to the mix. This version uses less mayonnaise substituting some yogurt in its place but it has the same sweet, savoury and crunchy mixture of celery, apples, raisins and walnuts...

  • Ingredients

    ¼ tsp Indian Garam Masala, organic
    ¼ tsp Cayenne Chilli powder, organic
    ½ tsp Ground Coriander, organic
    ½ tsp Ground Cumin, organic
    ¼ tsp Ground Turmeric, organic
    For the Dressing:
    2 tablespoons freshly squeezed lemon juice
    2 tablespoons mayonnaise
    120ml natural yogurt
    Salt to taste

    For the salad:
    2 fuji apples
    2 teaspoons fresh lemon juice
    100g lightly toasted walnut halves
    2-3 celery sticks thinly sliced celery,
    50g cup raisins
    2 tbsps of fresh parsley

    Preparation

    Mix together the lemon juice, yogurt, mayonnaise, spices, and salt. Set aside.
    Chopped the apple into bite size pieces. Toss in a large bowl with 2 teaspoons lemon juice. Add the remaining ingredients and toss together. Shortly before serving toss the salad with the dressing.
