Fattoush Salad
Middle eastern salad which includes toasted pitta bread. Perfect accompaniment with grilled meats. Especially good with our Zatar Chicken.

Ingredients
1 ½ tsp
Sumac (non organic) 4-5 plum tomatoes, chopped
1 cucumber, peeled and chopped
3 pitta breads, split in half
1-2 chopped spring onions, finely chopped
large handful fresh mint, coarsely chopped
large handful parsley, coarsely chopped
1 garlic clove, grated
1 lemon, juice of
5-6 tbsps Olive oil
coarse salt to taste
Preparation
Lay your split halves of pitta bread on a tray and grill until crisp and golden.
In a large salad bowl toss together the tomatoes, sucumber spring onions, mint and parsley. Snip the crisp pitta bread into the salad with a pair of scissors.
In a small bowl whisk together the oil, lemon juice, garlic, salt and sumac.
Dress and toss the salad just before serving.
