Allspice

Highly aromatic dried berry from the Jamaican bayberry tree which resembles a peppery compound of cloves, cinnamon, and nutmeg. Allspice is indispensable in Middle Eastern and Eastern Mediterranean (Greece, Turkey, Syria) cuisine appearing in stews and most often with meat. It is much loved by Scandinavians for fine meat pastry and a common ingredient in classic Caribbean dishes. Crush the berries in a pestle and mortar or grind in a coffee/spice grinder.

Sprinkle a little over sweet potatoes, fruit and root vegetables. Excellent in combination with cinnamon to perk up couscous.
