Colombo

This blend originated from the Sri-Lankan plantation workers in the French West Indies, especially in Antilles, Martinique and Guadeloupe. Traditionally used to make curry of lamb or goat, but also popular for fish curries.

Try adding sweet potato or pumpkin when cooking this curry to produce a delicious one pot meal. Colombo can be used as a barbeque spice rub for sprinkling over sea-food. It also works well in stir-fries, or as a marinade for chicken. Try adding a little to liven up a mayonnaise or yogurt based dip.
