Fennel seeds

Sweet, light aromatic and similar to anise. In Italy fennel is also used to season pork roasts and spicy sausages, especially the Florentine salami finocchiona. Used in English and French cuisine to flavour fish dishes, especially in a court bouillon for poaching fish and seafood. It is also used to flavour breads, cakes and confectionery.
