Fenugreek seeds

Pungent with burnt sugar aroma. Very popular in Indian, Sri-Lankan and Middle-Eastern cuisine. In Iranian cooking it is common in stews and is often found in flavouring the Middle Eastern confection halva. Particularly good with oily fish such as mackerel and tuna. Excellent in chutneys and relishes.
Use sparingly as too much can cause a pronounced bitterness and may overpower with liberal use.
