Indian Garam Masala

A wonderfully aromatic blend of spices from India. Garam Masala literally means "hot spices" but this does not refer to piquancy rather the warmth in the flavour and aroma of the cinnamon, cloves etc, contained in this blend. It is an essential ingredient of Indian cuisine and is usually added at the end of cooking or just before serving a dish to preserve the full depth of flavour and perfume this blend emits.

Add ½ tsp of Garam Masala to Indian curries, and lentil dishes to truely elevate the flavour. It is excellent for flavouring non Indian dishes too. Sprinkle over hot buttered rice, or couscous. Try adding a little to apple or pear when making compote or to the poaching liquid for poached fruit. Sprinkle some over squash before roasting or into a bowl of pumpkin soup before serving, or onto corn on the cob that has been brushed with oil or butter. Versatile and wonderful.
