Mace

Sweeter yet stronger outer husk of the nutmeg. Intensely aromatic. Used for soups and sauces, and is often found in wine mulling mixtures. In Sweden mace is added to meatballs and used in baking. Like nutmeg it works well with milk based sauces or creamy desserts.

Whole mace like nutmeg preserves its flavour and aroma and is best used freshly ground.
