Tart, sourness, and vivid purple, a popular lemon substitute in Eastern Mediterranean and Middle Eastern cooking. Especially popular in Turkish and Lebanese cuisine, rubbed on meat before grilling, a flavouring for kebabs and popular sprinkled directly on salads and rice dishes. It is a major souring agent, used where other regions would employ lemon, tamarind or vinegar.
