Carrots with garlic cloves and star anise

The natural sweetness of carrot marries extremely well with star anis and cardamome, producing a wonderful vegetable side dish that elevates the humble carrot to regal status.

2, lightly crushed Green Cardamom pods
2, lightly crushed Star Anise, organic
750g carrots
3 whole garlic cloves
olive oil
2-4tbsps vegetable stock


Peel the carrots and cut into halves or quarters, depending on how large they are. Put them in a frying pan with the whole cloves garlic, lightly crushed star anise and cardamoms and a slug of olive oil. Fry gently, then add a little vegetable stock and keep cooking, turning the carrots regularly until they are tender. Make sure any liquid is bubbled off.
