Peel the carrots and cut into halves or quarters, depending on how large they are. Put them in a frying pan with the whole cloves garlic, lightly crushed star anise and cardamoms and a slug of olive oil. Fry gently, then add a little vegetable stock and keep cooking, turning the carrots regularly until they are tender. Make sure any liquid is bubbled off.
