Cumin Roasted Carrots

A classic marriage of carrot and cumin, made more fragrant and naturally sweetened by roasting.

2 tsps Cumin seeds
150g of small carrots
Olive oil, to drizzle
2 cloves garlic, unpeeled and whole
2 springs of rosemary
salt and pepper to taste
2 tbsps chives, chopped


Preheat the oven to 200C.
Place the carrots onto a baking sheet, add the garlic cloves, rosemary and cumin seeds and season generously with salt and freshly ground black pepper. Mix together.
Place in the oven and roast for 10-15 minutes, or until the carrots are tender and golden-brown.

Sprinkle over the chives and serve
