Fresh Kaffir Lime Lemonade

Tall and refreshing glass of lemonade. With the added fragrance of lime leaves. Perfect for a balmy summer afternoon.

5-8 Dried Kaffir Lime Leaves
200g caster sugar
315ml water
1.25 litres fresh lemon juice, strained (from about 24 lemons)
1 lemon thinly sliced, to serve.


Bring sugar and water to a boil in a small saucepan along with the lime leaves, stirring to dissolve sugar. Remove from heat, cover, and steep for 15 minutes. Allow to cool completely.

Combine lemon juice and lime leaf syrup in a tall jug. Serve over ice, and a slice of lemon (Or cover, and refrigerate for up to 3 days.)
