Glazed salmon with Japanese Seven Spice

This is frequently at our table at Cardamome&Compagnie. Sweet, salty rich salmon with a spiced crunch. Delicious and incredibly fast and easy.

Ingredients

˝tsp Japanese Seven Spice (non organic)
110g x 2 salmon fillet - boneless and skinless
3 tbsps dark maple syrup or dark brown sugar
3 tbsps of Japanese soy sauce

Preparation

Preheat the oven to 220°C.

Place the salmon fillets in a oven proof dish. Mix together the maple syrup and soy sauce and pour over the fish, making sure to coat the fish thoroughly.

Place in the oven and roast for about 10mins (though this will depend on the thickness of the fillets). Baste the salmon in the maple soy sauce after 10mins and switch from oven to a hot grill for just a 1-2 minutes to get a lovely glossy glaze. Watch the grill as the syrup will burn if left too long. Remove from the grill and sprinkle with the Japanese Seven Spice.

Serve immediately with green vegetables. Or alongside sweet potato mash flavoured with chilli, garlic and rosemary. Simply perfect!
