An essential accompaniment to Fajitas, Guacamole is equally delicious as an aperitif. Serves either with corn tortilla chips or vegetable crudités.

a pinch of Cayenne Chilli powder
¼ tsp Ground Coriander
¼ tsp Ground Cumin, organic
¼ tsp Sweet Paprika
2 avocados – soft
1 lime - juice of
½ onion finely chopped
1 clove of garlic – crushed
½ tsp salt
Handful of fresh coriander – finely chopped
½ pot natural yogurt (optional)


Peel and crush the avocado with a fork and add the lime juice. Add the spices, and the finely chopped onion and garlic. Season with salt and fork in fresh coriander leaves.

Alternatively, if you prefer a smooth guacamole put all the ingredients in a food processor and blend till smooth. Add natural yogurt if you a lighter finish.
