Mexican Fajitas with Guacamole
These soft tortilla wraps filled with spiced chicken or beef and saute vegetables are an easy and highly popular favourite with all the family.

Ingredients
2 Tbsp
Mexican Fajita Seasoning, organic 4 bonless, skinless chicken breasts or 600g of frying beef - cut into strips
1 medium onion, sliced
1 red pepper, sliced
2 tbsps cooking oil
50ml water
Preparation
In a large frying heat 2 tbsps of oil over a medium high heat. Add the sliced peppers and onions and fry for about 5/7mins until they begin to colour. Remove from the pan and set aside.
In the same pan over a high heat add the strips of meat, allow to brown well for about 5mins. Add back the onions and peppers and the fajita blend. Stir and cook for a few moments to allow the spices to thoroughly coat and cook. Remove from the pan and keep rhe meat warm.
If you are cooking chicken add 50ml of water and allow to cook for a further 5mins before removing to a dish to keep warm.
Heat the tortillas as per the instructions, serve the tortillas alongside the meat and peppers, guacamole, chopped tomatoes, grated cheese and sour cream.
Best to let everyone fill there own tortillas as desired.
