Perfect Dry Rub for Steak

This unusual blend of spices may seem surprising but the subtle flavours lend themselves perfectly for a dry rub that only enhances the flavour of the meat without masking; Even spice sceptics will be delighted.

2 tsp Coriander seeds
tsp Fenugreek seeds
1 tsp Nigella seeds
tsp Crushed Bird's Eye Chilli
4 Steaks, bavette, sirloin (faux filet) etc
1/2 tsp salt
freshly ground black pepper to taste


Grind the fenugreek seeds to a fine powder in a pestle and mortar or a spice grinder. Add the coriander seeds and course grind again. Stir in the nigella seeds, chilli flakes, salt and pepper.

Divide the blend and rub the spice blend onto both sides of your steaks. Leave to marinade for at least 1hr. Make sure the grill is white hot before putting on the steaks (smoking hot for a frying pan) and cook to your preferred doneness.
