Heat the oil in a large heavy bottomed lidded pan over a high heat. Add the popcorn kernels, and put the lid on immediately. The popcorn will begin popping within a minute, do not remove the lid at this point. Shake the pan a couple of times to make sure the kernels all fall to the bottom and to reduce the risk of burning. Once the popping subsides (in about 2mins) remove from the heat and leave covered for a few seconds so that the residual heat can pop any remaining kernels and remove the lid.
In a small pan melt the butter and add the spices, salt and sugar, stir for a few seconds and relove from the heat.
Pour the spiced butter over the popcorn and stir thoroughly to coat as much of the popcorn as possible.
