Strawberry Soup

1 good pinch Allspice
2 Dried Kaffir Lime Leaves
1 tsp Dried Lemongrass, organic
20 cl water
3 tablespoons powdered sugar
700 g strawberries
10 mint leaves chiselled


Combine in a saucepan the water, sugar and spices.

Heat, stirring to dissolve sugar and infuse the spices.

When the mixture gets to the boil, remove from the heat, pass the syrup through a thieve and let it cool.

Meanwhile, remove stems and chop the strawberries and place in the cooled syrup.

Refrigerate for 2 h.

Serve in a small bowl, sprinkled with chopped mint.
